Pork Chops







Trim and flatten the pork chops nicely, then salt and pepper them about 1 hour before cooking; heat 2 tablespoons butter in frying pan, put in chops, and saute 6 minutes on each side; remove chops to hot platter, skim off surface fat from butter, and make into gravy with flour and milk; serve with apple-sauce.
