Chili Relish







Put five pounds washed green tomatoes in a chopping bowl, sprinkle with one cup salt, and chop fine; as green water rises, pour it off; when chopped very fine, lift out by handfuls, squeeze out juice, and place in cooking bowl. Chop three pounds white tender cabbage, and add 3 pounds fine chopped white onions and throughly mix; add three tablespoons each of ground white mustard seed and ground allspice, four tablespoons chili powder, one cup fine sugar, and one quart good cider vinegar. Add to tomatoes and cook slowly for three-quarters hour, add four tablespoons more of chili powder, and finish cooking for fifteen minutes longer, and set to cool. When cold, seal in sterilized glass jars.
