Worcestershire Sauce






To 5 cups good cider vinegar, add: 1 level teaspoon each, all in finely powdered form, cloves, black pepper, cayenne, Jamaica giner, paprika, chili powder, 5 tablespoons each of the table salt and grated shallots; mix all together; and add 2 cups sherry wine substitute; simmer whole about 1 hour; strain, let stand in stone or glass jar a week; strain again, and put in corked bottles; straining out the coarser particles is all that is necessary.
