Mayonnaise






2 egg yolks
1/2 cup oil
2 teaspoons vinegar
1/8 teaspoon salt
1/8 teaspoon paprika
Put egg yolks, salt and paprika into a deep soup plate if using a whisk; beat them until they have lightened up considerably in color; now, add some of the oil, drop by drop, beating it in rapidly; after several tablespoons have been worked in, the oil may be added by the half-spoonfuls, and then by spoonfuls-- although the dressing may break a little, beating it will bring it together again; add vinegar by drops when dressing threatens to become too stiff, adding all the remaining vinegar at the end of the process. Add a little boiling water at the end to finish and keep it from oiling.
