Potato Chowder

Peel and cut into dice
shape, 6 medium sized potatoes, or about 3 cups; cut into small bits, 1/4
pound or about 4 cubic inches, bacon or salt pork; put meat into hot
frying pan, then add onion and fry together until a light brown; put a
layer of potatoes into a saucepan, sprinkle on a layer of meat and onion,
salt and pepper to taste, and if liked, a little finely chopped parsley;
build layers alternately until all are used; add 2 cups water, cover
closely and let simmer 20 minutes, then add 2 cups milk and 1 tablespoon
each flout and melted butter working together; stir carefully to avoid
breaking up the potatoe cubes, unil chowder boils; serve with
crackers.
